Crispy Herb-Buttered Grilled Potatoes
- 2 pounds Strohauer Farms Gourmet Fingerling Potatoes
- 1/4 cup butter
- 1 teaspoon bottled Italian seasoning herbs
Cook potatoes in a covered microwave dish, with water to almost cover, cooking for 13 minutes or until tender. Drain and cool. Thread potatoes crosswise onto skewers.
Melt butter and mix in seasoning herbs. Brush over potatoes on both sides.
Heat barbecue to medium-high. Place potatoes on grill rack about 5 inches above coals and grill 10 to 15 minutes, turning skewers once or twice for even cooking, until potatoes are slightly crispy and blackened a bit. Brush with any remaining herbed butter before serving. Makes 4 to 6 servings.
