Slow-Cooker Sausage and Fingerling Potatoes

  • 2 pounds Strohauer Farms Gourmet Fingerling Potatoes
  • 1 pound smoked sausage (fully cooked) or 14 to 16-ounce package meatless (tofu-based) sausage (fully cooked)
  • 1 jar (about 1 pound 10 ounce size) pasta sauce, garden vegetable style
  • 1 pound onions, coarsely chopped
  • 1 cup low-sodium chicken broth or vegetable broth
  • 1 cup minced Italian parsley

Wash potatoes. Thickly-slice sausage on the diagonal. Combine potatoes, sausage, pasta sauce, onion and broth in crock of 4 to 6-quart slow-cooker. Cook on low for 6 to 8 hours or until potatoes are tender and flavors are blended nicely. Mix in parsley and serve. Makes 6 servings.
